Culinary Retreats & Nutritional Counseling

At Thirteen Moons, we offer culinary retreats that include a nutritional counseling program for those who don’t have the time to take an overnight culinary retreat. These culinary retreats combine our love of authentic, delectable vegetarian cuisine with personalized attention to your nutritional and health concerns.

Whatever your reason for wanting to change your diet, the importance of good nutrition is well documented. You may be faced with a health crisis or suffering from other ailments such as food intolerances or digestive disorders like Irritable Bowel Syndrome, which require dietary modifications. Perhaps your motivation is simply a strong desire to reduce your risk of illness, to feel healthier, increase your vitality and look better.
More and more, scientific evidence affirms that good nutritional eating habits do make a difference. For instance, recent studies have shown that molecules contained in certain foods can prevent cancerous tumours from progressing so the quality of your diet during treatment is important. Canadian researchers also claim that one third of cancer is attributable to diet.

Unfortunately, eating well is often more complicated than it should be. We all know about the general nutritional recommendations - lower fat intake, increase fibre, eat more fruits and vegetables. Yet, many people are unsure about how to go about making the necessary dietary shifts. Nutritional information is always evolving as new research studies are published. Every day new food products appear on the market with various health claims that can sometimes be misleading. Making sense of it all can be a challenge and quite confusing to consumers. Whether you’re a busy professional, retiree, student or stay-at-home parent, your time is precious. You may not have the inclination or the opportunity to do the research necessary to come up with a strategy that is best for you. And, what works for one person will not necessarily work for another. All of this can be daunting if you feel that you lack the knowledge and support necessary to change your lifestyle. Yet, the consequences of not taking action can be debilitating and result in illness, lack of energy, disruptive sleep patterns, irritability, poor self image, aches and pains, and many more unpleasant symptoms. Chances are the problems will get worse if something is not done

As a Certified Nutritional Practitioner since 2000, Louise is qualified to provide guidance on building and maintaining your nutritional well-being. Over the years, she has successfully worked with many individuals who have made dietary changes that have resulted in positive health benefits –increased energy, better sleep, reduced digestive distress, lower cholesterol and blood pressure levels, and more. Specifically, she will help you:

The Culinary TransitionsTM program is designed to help you achieve your nutritional goals so you can feel good again.

I’m Ready for Change is the basic nutritional counseling package that would suit anyone who is not able to do an overnight retreat. This package can also be combined with an overnight culinary retreat.

This nutritional counseling package includes:
-one hour Nutritional Consultation
-healthy cooking workshop tailored to your interests
and skill level
- four 15 minute follow-up sessions
-Thirteen Moons cookbook-comprehensive information
kit with menu plans and shopping lists
-unlimited Email support for three months
-monthly E-Newsletter subscription.

The Process
Once you book the culinary retreat and/or nutritional counseling package that’s right for you, we’ll send you intake forms to complete so we can get a good understanding of your health history, eating and exercise habits. You will return these to us for review prior to your initial nutritional consultation. During your first session, Louise will find out more about your lifestyle, eating schedule and patterns and your food preferences. Based on these findings, she will put together a comprehensive information kit for you to take home with her detailed recommendations, including a menu plan and other tools that will help you achieve your goals.

The follow-up sessions are designed to help you stay on track and address any issues that come up as you implement the changes in your daily life. They may be schedule as 30-minute sessions at intervals that suit your needs. All consultations can be done in person or on the phone. Additional follow-up sessions can be purchased if further support is desired.
